Beef and Vegetable Stew
Serves: 4 (2 adults and 2 children).
INGREDIENTS
Diced Stewing Beef 454g
Stew Pack Veg 1 kg
Baby Potatoes 1kg
Knorr Mealmaker Country Stew 45g
Salt and Pepper
Sunflower Oil to fry
Water 850ml
METHOD
1. First heat a large sauce pan and add 1 tbsp of SuperValu sunflower oil.
2. Fry the beef until nicely coloured, about 5 minutes.
3. Prepare and roughly chop the vegetables and add to the sealed meat in the saucepan and fry for approx 2 more minutes.
4. Add the Knorr Stew Pack Mix to the saucepan and stir in 850ml of water, mixing well.
5. Cover the saucepan and bring to the boil.
6. Simmer on a gentle heat for 1 hour.
7. Peel the potatoes and add to the saucepan.
8. Simmer for a further 40 minutes, stiring occasionally until the potato is cooked and the stew is thick.
9. Now chop the parsley from the stew pack and add to the stew, correct the seasoning with salt and pepper and savour!
Top Tips
1. For extra flavour, add a sprig of rosemary.
2. For a more hearty and thick Stew, why not add 100g of Pearl Barley.
