Tasty Fish Cakes

These delicious fish cakes make a great summer supper.

Serves: 4.
Preparation Time: 25 minutes.
Cooking Time: 10 minutes.

INGREDIENTS
SuperValu Natural Smoked Haddock, crumbled
200g cooked potato, mashed
1 SuperValu red pepper, diced
SuperValu red onion, diced
2 tbsp mayonnaise
1 tsp dijon mustard
tsp cayenne pepper
50g fresh breadcrumbs
Juice of 1 lemon
SuperValu Cooks’ Ingredients Sea Salt and freshly ground Black Pepper

METHOD
Place a frying pan over a low heat and add a dollop of olive oil and
then scoop in the diced onion and red pepper and cook until soft.
Once softened, place in a large mixing bowl. Tip the smoked fish,
mashed potatoes, cayenne pepper, mayonnaise, mustard,
breadcrumbs and lemon juice into the bowl with the red pepper and
onion. Season with salt and pepper and mix well. Shape the mixture
into 4 cakes and place in a fridge for 30 minutes to chill (this helps
the fish cakes keep their shape). Then place the frying pan back over
a medium heat and add a dollop of olive oil. Cook the fish cakes for 5
minutes on each side or until golden. Serve with a fresh green salad
and a lemon wedge.
